Breakfast is the most important meal of the day. Healthy breakfast keeps us mentally and physically active all the day. Especially if we have a busy and hectic routine, we should have a breakfast which keeps us energized whole day and improves our performance in routine activities. This avocado toast recipe is one of the best breakfast recipe I have ever tried because it gives us a lot of energy without making our stomach heavy. You ca also try my Spanish omelet and French toast with caramelized apples for breakfast.

Avocado is considered as super food for its nutritional content. It is a unique fruit with a rich creamy texture and amazing flavor. Because of its unique flavor it has become a part of so many recipes. Avocado is rich in potassium and fiber. Unlike most of the fruits which contain carbohydrates, avocado is rich in healthy fats. It contains 77 percent of monounsaturated fats which are beneficial for our heart health. My chia seed pudding recipe is also super healthy to have in breakfast.

I decide to share this recipe because now people have become more health conscious and look for health friendly recipes. Because of avocado’s high fat and low carb property, avocado toast is a good option for people on keto recipes. I have added grilled veggies and eggs in my recipe to make it a complete breakfast meal.

Avocado toast ingredients:

  • Avocado: Take fully ripe creamy avocados for your toast. There is a tip to check how well ripe is avocado. If avocado is slightly pressed if we push it with our thumb, then avocado is well ripe.
  • Bread: For this recipe I am using bran bread. But you can use bread of your own choice.
  • Eggs: I always prefer to have eggs in the breakfast because eggs are full of protein and maintain our energy whole day. That’s why I am including eggs with avocado toast.
  • Mix vegetables: I am using tomatoes, olives and mushrooms to serve with avocado toast. You

can use seasonal vegetables of your own choice.

Avocado toast variations:

  • If you want your avocado toast gluten free then you can use bread made up of grains other than wheat.
  • You can sprinkle different herbs on avocado toast. Parsley, coriander, oregano, chili flakes and basil go well with the toast.
  • You can mash the avocado and spread it on your toast and top it with fried egg.
  • If vegetables like broccoli, spinach, carrots, and bean sprouts are in season then you can grill them and add in your breakfast with avocado toast. These veggies go well with breakfast.

  • A pan

  • 1 medium Avocado
  • 2 medium Tomatoes
  • ½ cup Mushrooms
  • ½ cup Olives
  • 2 large Eggs
  • 2 slices Bread Bran bread
  • ½ tsp Mixed herbs
  • 4–5 tbsp olive oil
  • 1 tsp butter


  • Cut the vegetables into small chunks
  • Add 2 tbsp olive oil in the pan. Put a pinch of salt and black pepper in it. Then add tomatoes and mushrooms and toss them in oil for 2 minutes. Then take them out.
  • Add three tablespoons of oil in pan. Crack two eggs for frying.
  • Apply butter on both sides of bread pieces toast them in pan.
  • Cut avocados into slices and put them on the pieces of bread.
  • Put fried eggs on the toast and sprinkle mixed herbs on them. Assemble the platter with mixed vegetables.
