BEST HOMEMADE STRAWBERRY ICE CREAM

This homemade strawberry ice cream is just the ice cream you scream for. It is dreamy, creamy yummy dessert perfect for your summers. This rich strawberry flavoured ice cream requires just three ingredients to entertain your taste buds. It is made with fresh strawberries, free from any artificial colour and flavour and is totally cooking free.

strawberry ice cream is something very nostalgic for me. It reminds me of my childhood when my best treat was to go for outing and eat strawberry ice cream. At that time, I did not know that making ice cream is so easy. You just have to beat ingredients together and freeze to make this delicious dessert.  Although strawberry is my favourite flavour but I also enjoy other fresh fruity flavours. In order to give a two in one touch, I mixed vanilla flavour with strawberry flavour and this idea worked amazingly. The cream which I used for making ice cream was mildly vanilla flavoured and I mixed strawberry puree three portions of cream and left one portion as it is. This sweet vanilla portion of ice cream balances little tangy punch of strawberries. I also added strawberry chunks in it which enhance the fresh tickle of strawberries in your mouth.

An optimum bite of this ice cream gives you a perfect balance of flavours in your mouth. I also love the look of this ice cream. Bright pink colour coming from fresh strawberry puree and cream mixture with white marbling in it and scattered chunks of bright red strawberries don’t allow you to look anywhere else when it comes in front of you. You don’t need any kind of ice cream maker for making this ice cream. I have an electric beater which is perfect for making it but you can also make it in electric blender. You can get perfect smooth and creamy ice cream without making any custard base.

Strawberry ice cream tips and tricks

  • If your strawberries are too sour, then be careful in adding their chunks in ice cream. It’s better that you add sugar in them and leave for an hour so that they become sweet and then add them in your ice cream.
  • In order to keep your ice cream from becoming icy, it is very important that you transfer your ice cream mixture in an air tight container before putting it in freezer. After transferring, cover ice cream mixture with a cling foil and then tap this foil to stick it with mixture and then close lid of container. In this way air cannot enter in it.
  • When you scoop out your ice cream, dip your ice cream scoop spoon in hot water and then make scoops. This will ensure that your scoop spoon moves smoothly in your ice cream.
  • Use dairy whipping cream for best flavour of ice cream but if you are allergic to dairy then you can use non dairy cream.

Equipment

Ingredients

  • 1 cup strawberry puree
  • 6-7 finely chopped strawberries
  • 1 tbsp sugar
  • 500 ml whipping cream
  • ½ cup condensed milk
  • few drops vanilla essence

Instructions

  • Chop 250gm strawberries and make their puree in blender.
  • Finely chop 6-7 strawberries, add 1 tbsp sugar in them and leave aside for an hour.
  • Beat chilled whipping cream until you get soft peak. Add few drops of vanilla essence in it and mix. Add condensed milk and whip again until it is mixed in cream.
  • Take out ¼ of cream and add strawberry puree in rest of cream. Beat until puree is fully mixed.
  • Add chopped strawberries in cream and mix well.
  • Transfer the cream mixture in a container. Pour reserved cream mixture on it and mix two flavours roughly.
  • Place cling foil upon container and tap with hands until foil stick to ice cream mixture. Close the lid of container and freeze overnight.
