I tried so many recipes but I was not getting desired results. Finally, after so many trials, I became successful in producing this moist and buttery cake and believe me it is super easy. This easy lemon loaf cake is not copycat of Starbucks lemon loaf as it has its own unique taste.

Sometimes simple thing made with simple techniques give amazing results. My recipe of moist lemon loaf is one of them. You need nothing like fancy ingredients and fancy equipment for making it. Lemon is always a thing included in my daily routine in one way or other. It’s beautiful refreshing smell and tangy flavor always inspires me to make recipes including lemon. Everyone is going to love its rich, sweet and tangy lemony flavor.

Glaze topping give a beautiful look and extra flavor to your cake. I have topped my cake with glaze made of cream and sugar and some lemon zest. You can also make glaze with sugar and lemon juice. Most of the sponge cake recipes which I try are dry and hard.

Specialty of this cake is that it retains its moisture even if you keep it in fridge for three or four days. My carrot cake with cream cheese frosting is also one of such cakes. Tips for successful moist lemon loaf

  • It is very important that you use dairy butter. Margarine or oil does not give you desired results. Your butter should be on room temperature, not very hard or completely melted. Mixing couple of tablespoons of oil with butter helps in giving extra moisture but I have used ghee (clarified butter) instead because it is better in flavor.
  • I have not used electric beater in making this cake. When we beat cake batter, air enters in it which makes your cake light and spongy. This lemon loaf is denser instead and to get that consistency I prefer whisk instead of beater.
  • Don’t serve this cake immediately after baking. Wait for it to completely cool down. This cake actually tastes best a day after it is baked. Save leftover cake in fridge and wrap it in cling foil.
  • Add lemon zest in sugar and mix them. Press sugar with spoon to infuse flavor of lemon zest in it. You can rub sugar and lemon zest with your finger tips also. Make sure your all ingredients should be on room temperature.

Ingredients

  • 1 cup sugar
  • 1 tbsp lemon zest
  • ½ cup butter
  • 2 tbsp ghee (clarified butter)
  • ¼ tsp yellow color
  • 1 and ¼ cup flour
  • 2 whole eggs
  • 1 tsp baking powder
  • 2 tbsp lemon juice
  • 1 cup milk
  • ¼ tsp salt

Instructions

  • Mix sugar and lemon zest. press sugar and zest with spoon to infuse zest flavor in sugar.
  • Add butter and ghee. Mix them with sugar.
  • Add yellow color and whisk the mixture until butter becomes fluffy.
  • Add two eggs one by one.
  • Now add lemon juice, baking powder, and flour. Mix them completely in butter mixture
  • Put one cup milk and salt in mixture. Mix them completely until no lumps remain.
  • Take a 9*5 inch baking pan. Cover sides and base with parchment paper and add cake batter. Bake at 160 degree centigrade for one hour.
  • Mix sugar and cream to prepare glaze. Add glaze on top of the cake when cake is cool down after being baked.
