  • Flour: I am using all purpose flour. You can also replace it with almond flour or coconut flour as per your choice.
  • Butter: Unsalted dairy butter is best to use for this cake. Don’t use margarine.
  • Eggs: Use normal large sized eggs at room temperature. But don’t skip the eggs. Eggs give base to the cake.
  • Cooking oil: Using cooking oil with butter gives perfect moisture to cake.
  • Brown sugar: It is another important ingredient to add in the cake.
  • Carrots: If fresh carrots are in season then they are best to use. Hand grate them to include in cake.
  • Cinnamon, vanilla and ginger: These spices are actually the main protagonist in this recipe. They give distinct aroma and unique flavor to the cake. You can skip vanilla essence or vanilla extract if you don’t like it. But always use freshly grated ginger; don’t use ginger powder or dry ginger.
  • Yogurt: Yogurt helps in maintaining moisture in the cake. Its acids activate baking soda and make cake soft and fluffy.
  • Raisins and walnuts: It is totally optional to add raisins and walnuts in cake. I like their flavor so I add them. You can also add dark chocolate chips any other nut which you like.
  • Cream cheese: Cream cheese frosting makes a wonderful combo with carrot cake. You can skip frosting but I recommend it because this frosting enhances the beauty and flavor of cake.

Can we replace brown sugar with white sugar in carrot cake?

My answer is no. Brown sugar has molasses in it which gives that old fashioned caramel toffee like flavor and distinctive dusky color to our cake. So the carrot cake will lose its traditional favor and look if you use white sugar.

Can I freeze carrot cake with cream cheese frosting? How to store carrot cake?

Yes, you can definitely freeze your carrot cake for later use. only a few thing should be taken care of. one thing is that do not freeze your cake immediately after baking and let it cool down. Second important thing is to wrap cake in cling foil completely before freezing to intact moisture. If you cake is with frosting then freeze it without wrapping for one hour and when frosting gets hard then wrap it in foil and freeze again.

Tips for baking perfect carrot cake:

  • Don’t over beat the cake mixture. You can use hand whisk also instead of electric beater. Carrot cake has a gooey and chewy texture. By over beating the mixture you will not get that texture.
  • Be careful about the measurement of ingredients especially baking soda and baking powder. Also don’t overload the mixture with carrots, walnuts and raisins.
  • When you take out the cake from oven, let it cool completely and then apply frosting. Also don’t cut the hot cake.

Ingredients

  • 1 and ½ cup all purpose flour
  • 150 gm unsalted butter
  • 3 whole eggs
  • 2 cups brown sugar
  • ¼ cup vegetable oil
  • 1 cup grated carrots
  • ¼ cup back raisins
  • ¼ cup crushed walnuts
  • 2 tbsp cinnamon powder
  • 1 tbsp ginger
  • 3 drops vanilla essence
  • cup powder sugar
  • 120 gm cream cheese
  • 150 gm yogurt
  • 1 tsp baking powder
  • ¼ tsp baking soda

Instructions

  • Beat butter oil and brown sugar together.
  • Add yogurt and give mixture a slight beat.
  • Add 3 eggs. But make sure to add eggs one by one.
  • Now add carrots, raisins, cinnamon powder, vanilla essence and walnuts and beat slightly.
  • Include baking soda, baking powder and ginger.
  • Now add flour in mixture. First add half of the flour and mix. then add other half.
  • After the mixture is ready pour it in the cake pan. Grease the pan before adding mixture.
  • Bake the cake for about 45-50 minutes at 160 degree Celsius.
  • For frosting beat cream cheese and 2 tbsp of butter together.
  • Add powder sugar and beat until cream cheese becomes fluffy.
  • Cool down the baked cake and apply frosting.
