Chia seeds are black colored seeds which come from the plant named Salvia hispanica. There is a blast of nutrients packed in these tiny seeds. Chia seeds are one of the healthiest foods available for us on earth. There are numerous ways to incorporate chia seeds in your diet. The recipe I am sharing with you is chia seed pudding which is very easy to make and yummy as well. Chia seed pudding is perfect for breakfast and snack. This chia seed pudding recipe is best for people who don’t have much time to spend in the kitchen and are searching for time saving and healthy recipes.

 I am sharing this recipe because there are a lot people who like gluten free and dairy free recipes. Chia seeds are naturally gluten free and I am using almond milk instead of dairy milk to make it dairy free as well. There is also a good time saving option about this recipe. You can make this pudding once and keep it in fridge for 7-8 days. Before sharing the recipe I want to share some health benefits of chia seeds.

Benefits of chia seeds:

  • Chia seeds are high fiber food. Most of the carbohydrates in them are fiber. That’s why it is perfect low carb food for you.
  • Chia seeds are perfect to eat for those people who want to lose weight. They work as fuller and don’t make you feel hungry for long.
  • They are an excellent source of plant protein because they contain high amount of protein as compared to other plants.
  • Because chia seeds are rich in omega-3 fatty acids, they reduce the risk of cardiovascular diseases. Omega-3 is very important for our brain health as well.
  • They contain antioxidants which protect our cells. They are also abundant in important minerals like magnesium, copper and calcium which are essential for our healthy bones. Chia seeds also help maintain our blood sugar.

Chia seed pudding variation options:

  • Consistency of pudding: In my recipe I am using two cups of milk and 1\4 cup of chia seeds. I find it perfectly thick for me. But if you like to have thicker or thinner pudding, you can adjust the ratio of milk accordingly.
  • Milk options: I am using almond milk for my pudding. It’s very simple to make almond milk at home. You just have soak almonds overnight. Then grind them with water and stain. Your almond milk will be ready. Feel free to use milk of your own choice. It can be cashew milk, coconut milk or regular dairy milk.
  • Topping: Be creative and try different toppings and layers. for pudding. You can use any seasonal fruits, berries and nuts of your choice. You can also sprinkle cardamom or cinnamon powder on the top to enhance the flavor.
  • Sweetener: you can use sweetener of your choice. I am using syrup which is mixture of corn and maple syrup because I like its taste. You can use maple syrup or jaggery syrup.

Ingredients

  • 2 cups Almond milk you can also have cashew milk, coconut milk or dairy milk.
  • ¼ cup Chia seeds
  • 2 medium Bananas
  • 1 cup Strawberries
  • ½ cup Walnuts you can use other nuts also.
  • 3-4 tbsp Maple syrup

Instructions

  • Soak the chia seeds in almond milk and keep them in the fridge overnight.
  • Cut fruits into cubes and take a jar for assembling the pudding
  • First put pudding in jar. Then add fruits walnuts and syrup. again put the second layer of pudding on fruits. Repeat the same layers and top the pudding with fruits and nuts
