CHICKEN ALFREDO PASTA

 When we talk about comfort food, Italian cuisine immediately comes in mind. Pizzas and pastas are my all-time favourite food. I not only enjoy eating, but cooking them is also great fun. We can cook pasta in several ways but one of my most favourite is chicken Alfredo pasta. It is much like mac and cheese but it has its own unique flavours also. This pasta is fully loaded with cheese, cream, butter, and milk, a heaven for cheese lovers. If you are also one of them, must try it and also try my creamy chicken spinach pasta recipe.

My chicken Alfredo pasta recipe is very different from typical one. Traditionally penne or fettuccine pasta is mixed with Alfredo sauce and some pan roasted chicken slices are placed on it. But what is wrong if we add some colourful veggies in it. Veggies not only increase beauty of your pasta but take its taste to a next level. Some extra cheese topping backed until gold red, makes it simply irresistible and this how I make my Alfredo pasta. This delicious pasta is surely going to be in your weekly menu list when you try it once.

What is Alfredo sauce?

Alfredo sauce is an extremely creamy sauce made mostly with cream, cheese, milk, and butter. For seasoning we can add different Italian herbs, salt, and pepper. Mostly garlic is roasted in butter which gives beautiful aroma to sauce. It is a kind of white sauce but we don’t add flour for its thickening. I personally prefer little thicker consistency, so I do add flour for it in my Alfredo sauce (we can take this much liberty of our personal liking). Mostly pastas are made using tomato sauce as a base but this sauce is totally different and gives a unique flavour to pasta.

Different variations which you can try making chicken Alfredo pasta

Shape of pasta: it is not necessary at all that you use only penne or fettuccine pasta for this recipe. Any shape which you like is permissible. In my recipe I have used spiral shape and it looks amazing.

Vegetables: you can totally skip veggies from this recipe if you don’t like them. According to my personal preference, I have added capsicum, sweet corn, and mushrooms but you can alter them according to your choice. Only add those veggies which don’t take long to cook.

Cheese: mostly Parmesan cheese is used to make Alfredo sauce. I find its taste a little strong that’s why I replaced it with a combo of mozzarella and cheddar cheese. You can add Parmesan cheese and cream cheese as well depending on your choice.

Baking: just mixing pasta in Alfredo sauce and eating it is not enough at least for me . I added an extra topping of shredded cheddar and mozzarella cheese on my chicken Alfredo pasta and baked it until golden red colour comes. This simple step made my pasta heavenly delicious. I recommend you not to skip this topping idea.

Ingredients

for boiling pasta

  • 400 gm spiral pasta
  • 3 liter water
  • 1 tsp salt
  • 1 tbsp oil

for Alfredo sauce

  • 3 tbsp butter
  • 1 tsp garlic paste
  • 2 tbsp flour
  • 750 ml milk
  • 1 tsp salt
  • 1 tsp black pepper
  • 200 ml cream
  • 1 cup cheddar cheese
  • ½ cup mozzarella cheese

chicken marinade and vegetables for pasta

  • 500 gm boneless chicken
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp vinegar
  • 1 tbsp soy sauce
  • 1 large capsicum cut in thin slices
  • ½ cup button mushrooms cut in thin slices
  • 1 cup sweet corn

for baking

  • ½ cup cheddar cheese
  • ½ cup mozzarella cheese

Instructions

  • To boil pasta, add salt and oil in boiling water. Also add pasta in it. Cook for 15 minutes and drain water. Wash pasta with cold water, it keeps pasta from sticking together.
  • For preparing Alfredo sauce, add butter in pan. When butter melts, add garlic paste and fry it in butter until fragrant. Add flour and fry it for 2 minutes.
  • When flour is fried, add milk and whisk it until flour is mixed with milk.
  • Add salt, black pepper, and cream in it. Keep whisking to mix all things in sauce.
  • In end add cheddar and mozzarella cheese and whisk it. Consistency of sauce should be thick as shown in picture.
  • For marinating chicken, cut chicken in small cubes. Add ginger garlic paste, salt, black pepper, vinegar, and soy sauce in chicken. Marinate for 30 minutes.
  • After 30 minutes, add oil in pan. Now add chicken in it and cook it until water dries and chicken leaves oil.
  • When chicken is cooked add capsicum, mushrooms, and sweet corn. Fry veggies with chicken for 2 minutes.
  • Now mix boiled pasta, cooked chicken, and vegetables in sauce. Close lid of pan and let it simmer for 5 minutes.
  • Convert cooked pasta in a baking dish and add cheddar and mozzarella cheese on top. Bake it for 30-35 minutes at 180 degree centigrade until red golden colour comes on cheese.
