French cuisine is famous for its tradition, sophistication, and rich blend of herbs and spices. Tarragon herb, a part of four fines herbs of French cuisine, has a very distinct flavor and smell. It is used to give flavor to soups, stews and all kind of meat. In Pakistan dried tarragon leaves are easily available at grocery stores.

I made this creamy tarragon sauce with grilled chicken and veggies. I used chicken breast fillets and marinated them in local spices. It is very important to flatten the chicken fillets with hammer before applying spices. In this way chicken will become tender, juicy, and absorb spices well. We can serve tarragon chicken with grilled veggies, mash potatoes, backed potatoes, and bread. I love potato wedges so, I add them in my tarragon chicken platter. Make it and feel the aroma of French cuisine at home.

Creamy tarragon sauce ingredients:

Butter: Room temperature, unsalted white butter is best for the sauce. Don’t use margarine.

Onion: finely chopped white onion give best flavor to sauce.

Chicken stock: you can make chicken stock using bones of chicken. For saving time I am using chicken stock cubes for sauce. you can also use chicken powder.

Cream: use heavy dairy cream or double cream for best results.

Tarragon leaves: fresh tarragon leaves are difficult to find in Pakistan. I am using dried tarragon leaves, as they are easily available.

Can I use meat other than chicken with this sauce?

Creamy tarragon sauce goes very well with beef, fish and lamb. You can use undercut piece of beef, boneless fillet of tuna, lamb chops, or lamb shanks. Grill the piece of meat and serve it with sauce. This sauce also complements pastas and shawarmas. Drizzle it on your pasta or apply it in your shawarma and enjoy.

Pro tips for making a perfect chicken steak with tarragon sauce

  • Marinate your chicken well and don’t overcook it, otherwise it will become hard and difficult to chew.
  • Your vegetables should remain a crunch in them. If you cook them for long time, their beauty and crunch will be finished.
  • Consistency of the sauce should be medium i.e. neither too thin nor too thick. If you find your sauce too thin, add corn slurry to get desired consistency.
  • Sauce is quite heavy so, don’t pour too much sauce over your chicken. You can serve extra sauce in a separate jar.
  • Adding a dinner roll in your tarragon chicken platter gives it a beautiful and complete look.

For chicken marination

  • 3 pieces Chicken breasts
  • 1 tbsp Ginger garlic paste
  • 1 tbsp Mustard paste
  • 3 tbsp Wooster shire sauce
  • 3 tbsp Chili sauce
  • 1 pinch Oregano leaves
  • 1 pinch Tarragon leaves
  • ¼ tsp Salt
  • ¼ tsp Black pepper

For tarragon sauce

  • ½ medium Onion
  • 2 tbsp Butter
  • 2 whole Chicken cubes
  • ¼ tsp Salt and Black pepper
  • 2 cups Water
  • 1 cup Cream
  • 2 tbsp Dried tarragon leaves


  • ½ cup Zucchini Cut long slices
  • ½ cup Asparagus shoots
  • ½ cup Mushrooms Whole
  • 1 medium Potato Cut in wedges
  • ½ cup Carrots Cut long slices


  • Place chicken pieces between cling foil and flatten with hammer.
  • Marinate chicken with ginger garlic paste, salt, black pepper, mustard paste, chili sauce, Wooster shire sauce, tarragon leaves and oregano. Leave for 2 hours after marination.
  • Grease the grill pan with olive oil and grill marinated chicken pieces on it.
  • Cut potato wedges, season them with salt and olive oil and cook them in air fryer. you can also bake them or fry them in oil.
  • Grill all the vegetables also and season them with salt, black pepper and olive oil.
  • For making sauce heat butter in pan and add chopped onion in it. cook onion for 5 minutes.
  • Add two cups of water.
  • Put chicken cubes, salt and black pepper in it.
  • When chicken cubes are dissolved add dried tarragon leaves.
  • Now add cream in it.
  • Mix sauce thoroughly and cook for 2-3 minutes.
  • Put all ingredients in platter, drizzle sauce over chicken and serve.
