I love baking and trying different recipes related to it. This time I thought of trying coffee buns recipe inspired by Papparoti coffee buns. When I ate that bun from PappaRoti shop, I was amazed by texture, softness, and taste of it. i think this was the best coffee bun I have ever eate. I searched the recipe and gave it a few trials. Finally I got successful in making them and the taste was very close to PappaRoti buns (that’s what I think:)). This coffee bun is a soft bun with outer coffee crust and stuffed butter inside. Coffee mixture is piped on the top of the bun which covers whole bun from outside while baking.

You can start your day, having this delicious bun in breakfast with a cup of coffee. The best part is that you can make them once and store for 5-7 days.  Just heat them up in microwave for 20 or 30 seconds and enjoy any time. This bun is very different from ordinary one and very tasty itself, you don’t need any other thing to enhance its taste. Just take a cup of tea or coffee and enjoy. It is very nutritious and best for your child’s school lunch. Real secret of making these buns lies in kneading and correct use of all ingredients.

Origin of PappaRoti bun

Roti is a soft flatbread cooked on iron griddle. In south East Asia this roti is a traditional food from generations. It is said that in 2002 a woman in Malaysia, with passion of baking, tried a different version of roti called “roti bun”. She made round bun like roti and topped it with caramel coffee coating. She served it to her son who loved the moist center and crunchy outer coating. This actually gave birth to “PappaRoti” means “father of all buns”.

First PappaRoti store was opened in 2003 in Malaysia. With irresistible taste the buns got fame across the country. In very short period of time more than 400 Pappa Roti cafes are opened in different countries including Asia, Middle East, UK, Australia, and Canada. Pappa Roti has become a successful café chain all over the world as it gives a unique experience of snack to its eaters.

How to make coffee buns Papparoti style

  • While making dough, including correct amount of yeast is very important. I use ratio of one teaspoon to two cups of flour. It is also important to check yeast before adding in flour. Correct way of checking is to mix dry yeast in warm milk or water with a tablespoon of sugar. If bubbles are formed after some time then your yeast is working. You can include it in your flour.
  • Don’t make very big buns. Make them of medium size because very big buns have a chance of undercooked from inside.
  • Bake buns on medium heat. Very high heat will burn the outer cover very quickly.
  • Knead the dough for at least 20 minutes because smoother the dough better the buns.
  • It’s very important to convert icing in a piping bag. This way you can evenly cover the top of buns with icing.

Equipment

Ingredients

  • 1 tsp Instant dry yeast
  • 1 cup All-purpose flour
  • 1 tbsp Sugar
  • 2 tbsp Butter
  • 1 pinch Salt
  • ½ whole Egg
  • ½ cup Milk
  • 2 tbsp Dry milk

For outer icing

  • 1 tbsp Butter
  • 2 tbsp Sugar
  • 3 tbsp All purpose flour
  • 1 tsp Instant coffee
  • 1 tsp Coco powder
  • 2-3 drops Vanilla essence
  • ½ whole Egg

Instructions

  • prepare all the ingredients for making bun dough.
  • Mix yeast and sugar in warm milk and keep it aside until becomes foamy.
  • Add salt and dry milk in flour.
  • Add yeast mixture in flour and knead to make crumbles.
  • Now add egg and keep kneading. you can add warm water if needed.
  • In next step add butter in dough and keep kneading. Add a little bit of oil on hands to avoid mess.
  • Knead the dough for ten minutes and make it smooth.
  • Transfer the dough in a bowl and apply a little oil on it. Cover the bowl with cling foil and keep it at a warm place.
  • After almost two hours dough will become double in size.
  • Make four balls out of dough. two small and two large.
  • Make the small balls flat with your hands and put a piece of butter on it. Cover the butter by closing sides of dough.
  • Now make large balls flat with your hand. Put butter covered dough on it. Close the dough and make smooth buns. Place these buns on baking tray.
  • For icing mix butter and sugar in a bowl. Grind sugar before adding so that it mixes up easily.
  • Add egg and keep mixing.
  • Now add flour and coco powder in bowl and mix.
  • Add 2 tbsp of hot water in instant coffee and dissolve it. Mix it in bowl.
  • Add few drops of vanilla essence and mix thoroughly.
  • Put the mixture in a piping bag.
  • Pipe the mixture on top of your buns. Make sure to cover the top completely.
  • Put buns in baking oven for 20-25 minutes at 150 degree centigrade.
  • Top the buns with white chocolate.
