Sometimes we just want to relax, watch TV and enjoy a quick and delicious dinner. Pasta made in rich creamy spinach sauce is the best idea for such dinners. This delicious and creamy chicken spinach pasta recipe is so easy to make. You just need to have all the ingredients in hand and it gets ready in less than 20 minutes. The aroma of garlic, spinach and cheese with chunks of chicken and mushrooms, make it a perfect choice for weekend dinners.

Creamy spinach pasta sauce can be used with so many things. you can make it with steak also. if you are vegetarian and do not want to add meat, you can simply make mushroom spinach pasta or add any other vegetables of your choice. If you love pasta, you can try my Hakka noodles recipe.

Spinach is one of the healthiest vegetables having a lot of nutritional benefits. It is rich in iron, calcium, magnesium, and antioxidants. It is especially very essential for growing kids. But kids, like my kids, normally don’t like to eat spinach, so, I keep on trying to incorporate spinach in our diet with different recipes. Variations in Creamy chicken spinach pasta

  • Cheese: I have used cheddar cheese for making the sauce. You can also add mozzarella cheese and cream cheese also if you like strong cheesier flavor.
  • Vegetables: Along with spinach, I have added mushrooms in this it. You can also add other vegetables like capsicum, baby corn, cherry tomatoes and olives.
  • Meat: Meat is optional. I have added chunks of chicken in it. You can add smoked shrimps or chunks of grilled fish. But do not use red meat because it doesn’t go well with this recipe.
  • Pasta: you can use any pasta of your favorite shape. I have used long macaroni but pen pasta, spaghetti, and fettuccine also go well with the recipe.

Tips for making fool proof Pasta

  • Always use not stick pan for making sauce.
  • When you boil the pasta make sure you do not overcook it. Instead it’s better that you leave pasta a little under done. In this way, when you mix it in the sauce, it will not get soggy.
  • It is very important that you keep on stirring sauce with a whisk, otherwise it will get lumpy. Stirring is equally important while boiling pasta because pasta can get stick and cannot be separated after boiling.
  • When you add garlic, fry it until it becomes light golden. If you fry it more, its chunks give bitter taste and its smell overpowers in the pasta.
  • Consistency of the sauce is very important. It should neither be too liquid nor too thick. Only thick enough that when you add pasta, it sticks to the pasta.
  • Vegetables added should be crunchy. Add vegetables in the end otherwise they will be overcooked.

  • 250 gm boneless chicken
  • 1 cup Mushrooms
  • 2 whole Green chilies
  • 2 tsp Garlic chunks
  • 1 and ½ cup Spinach
  • 200 gm Long macaroni
  • 100 gm Cheddar cheese
  • 2 cups milk
  • 1 cup Cream
  • 2 tbsp All purpose flour
  • ½ tsp Salt
  • ½ tsp Crushed black pepper
  • 3 tbsp butter
  • ½ tbsp Ginger garlic paste
  • 2 tbsp Olive oil


  • Marinade chicken cubes with ginger garlic paste, salt and chili sauce for half an hour.
  • In a pan heat olive oil. Add ½ tbsp garlic and green chilies. Saute them in oil until garlic becomes fragrant.
  • Add chicken and ½ tsp black pepper. Cook it on low flame until it becomes tender.
  • Now add mushrooms and saute them with chicken.
  • In beaker boil water with ½ tsp salt and 1 tsp olive oil. when water starts boiling add pasta and boil it for 10 minutes.
  • In another pan heat butter. Add ½ tbsp garlic and fry it until it becomes fragrant. Now add flour and toss it until it changes color.
  • Add milk and keep on stirring with whisk.
  • When milk becomes thick add spinach, pinch of salt, and ½ tsp black pepper. Cook for 5 minutes.
  • Now add cream and cheese.
  • When all things are combined well and sauce is thick enough, add pasta in it
  • Assemble the serving dish. you can mix chicken and mushrooms in it, or you can top the pasta with chicken and mushrooms.
