CRISPY AND SPICY FRIED CHICKEN

We always underestimate homemade fried chicken and prefer branded one. Try to copy KFC chicken and fail always to create that taste. Well there are so many ways of making fried chicken which are far better in taste and form than branded one. Crispy and spicy fried chicken recipe which I am sharing with you is definitely going to win you hearts. After trying it, you will forget branded fried chicken. Moreover, this fried chicken is completely addictive. You will keep on making it after trying once.

I have used chicken leg pieces because this portion of chicken is the softest and juicy. Bringing cuts on leg pieces help to absorb all marinade well. It also helps to break down long fibers of meat in small pieces and easy to eat. I marinated chicken in two steps. First you soak chicken in water containing salt, lemon juice, green chilli paste, and ginger garlic paste for at least five hours. Then drain water and add cumin powder, coriander powder, chilli flakes, and salt. Again leave it for two hours. Finally, we will coat chicken with corn flour and plain flour and fry it.

Best part of this chicken is that it is not necessary to deep fry it. we can also make it in air fryer or bake it. I always prefer air fried chicken because it contains very less oil. We make this chicken in both ways, i.e. deep fry and air fry. We can make it according to our preference. I have also made potato wedges to serve with this chicken. These wedges complement it the best. This chicken is crisp from outside and soft and juicy from inside. You will feel get flavour of all spices in your every bite.

Marinade number one:

Mix lemon juice, green chilli paste, salt, and ginger garlic paste in bowl. Add one glass water and mix. Bowl should be big enough to soak all chicken. You can add more water if chicken is not fully dipped. Add chicken in bowl and marinate for 5-6 hours.

Marinade number two:

After 5-6 hours take out chicken from water and put in a separate bowl. Add cumin powder, coriander powder, red chilli flakes, and salt. I have also added little yellow food colour for giving more appetizing look to our fried chicken. Leave chicken for couple of hours.

Coating:

After two hours we add coating. For coating I have added corn flour and all purpose flour. These two things help chicken to get crispy from outside. Coat every piece of chicken completely.

Frying:

I have fried chicken in both ways. Half chicken deep fried and other half air fried. My intention is to show you both results so that you can decide your own, how to fry it. Air fried chicken is always preferred because it is healthier. But if you are perfectly fit, you can have deep fried chicken at least once in a week.

Ingredients

for marinade no 1

  • 2 and½ tbsp lemon juice
  • 2 tbsp green chilli paste
  • 2 tbsp ginger garlic paste
  • 1 tbsp salt
  • 1 glass water

for marinade 2

  • 1 tbsp cumin powder
  • 1 tbsp coriander powder
  • 1 tsp salt
  • 1 tbsp red chilli flakes
  • 1 tsp yellow food colour

for coating

  • 2 tbsp corn flour
  • 2 tbsp all purpose flour

for potato wedges

  • 250 gm potatoes
  • tsp salt
  • 1 tbsp olive oil

Instructions

  • Make cuts on all chicken leg pieces after washing.
  • In a bowl mix lemon juice, green chilli paste, ginger garlic paste, and salt.
  • Add one glass water and mix. Dip all chicken leg pieces in it. Leave for 5-6 hours.
  • After 5-6 hours take out chicken from water and add salt, red chilli flakes, coriander powder, cumin powder, and pinch of yellow food colour. Leave for another 2 hours.
  • After two hours add corn flour and all purpose flour in chicken and coat every piece nicely.
  • separate half chicken in a bowl for air frying. Add olive oil in that chicken and mix. Now put a butter paper in the base of air fryer and add all chicken in it. cook it at 180 degree for 30-40 minutes.
  • For making potato wedges cut potatoes without peeling them in small wedges. Add olive oil and salt. Cook them also in air fryer at 180 degree for 30 minutes.
  • Deep fry other half chicken at medium heat. Fry until chicken is tender from inside and crispy and golden from outside.
  • After 15 minutes open air fryer and turn the sides of all leg pieces. again close it and cook for another 15 minutes. if chicken is cooked with nice golden colour on it then turn air fryer off otherwise cook for more 5-10 minutes.
  • Serve tomato ketchup and mayonnaise with chicken. Grate a garlic clove and sprinkle parsley on mayonnaise for making it garlic mayo.
  • Serve hot with potato wedges.
