Eating vegetables is quite difficult especially for kids. But if we turn these vegetables into a delicious and healthy recipe then eating them becomes easy. It is difficult to guess how much vegetables are included in these soft, fluffy, and super tasty pancakes. Everyone in my family including kids loved the recipe.

I have included all my favourite veggies like potatoes, carrots, capsicum, cabbage, beans, onion, and garlic. To incorporate protein in these pancakes, I have added eggs and cheese. These two things enhance their taste as well.

In order to give base to my vegetable pancakes, I have added flour but if you want to make them gluten free, you can replace wheat flour with corn flour or rice flour. You can also add or subtract vegetables according to your taste. I remember in my childhood my mother used to cook stuffed vegetable “paratha” in order to make us eat vegetables in this form and we happily ate these yummy parathas. These vegetable pancake are a modified and simplified form of stuffed vegetable parathas and my family enjoy them a lot.

This vegetable pancakes recipe is very simple. You don’t have to knead dough and you can even incorporate leftover veggies in them. Just mix everything and start cooking and in just five to seven minutes they get ready. This is a perfect meal for your kid’s breakfast because these pancakes are full of vitamins, minerals, protein and iron. In this way they can start a day full of energy.  Serve them with garlic mayo sauce or chilli garlic sauce or simple tomato ketchup.

Tips to make perfect vegetable pancakes

  • In order to mix all the vegetables well, make sure to chop all of them finely. In this way no single veggie will give its distinct flavour and this will ensure that all the veggies will be cooked quickly
  • It is very important that consistency of the batter should be thick not runny in order to make perfect shaped pancakes.
  • When you chop your veggies, try to cut them in same size so that their cooking time doesnot vary.
  • Try to keep size of your pancakes small because small pancakes are cooked quickly and perfectly.
  • I highly recommend to use nonstick pan for cooking pancakes. If they get stick to the base of your regular pan, you will have a huge mess to handle.
  • Keep the heat low while cooking in order to ensure that pancakes are cooked from inside also.
  • Try to include those vegetables which have less cooking time. If you are adding vegetables like peas, corn, or potatoes, boil them before including in your pancake batter.
  • You can add some chicken powder in batter to make your pancakes more flavourful.

Ingredients

  • 1 cup grated carrots
  • ½ cup chopped capsicum
  • 1 cup chopped cabbage
  • cup chopped onion
  • cup chopped beans
  • 1 cup boiled and mashed potatoes
  • cup grated cheddar cheese
  • 2 tbsp butter
  • 1 tsp garlic paste
  • 1 tbsp salt
  • 1 tsp mixed herbs
  • 1 tsp chilli flakes
  • 1 tsp baking powder
  • 1 and ½ cup flour
  • ½ cup milk
  • 2 whole eggs
  • water as required

Instructions

  • In a bowl add carrots, capsicum, cabbage, and onions.
  • Now add boiled potatoes, beans, butter, and cheese.
  • Add baking powder, mixed herbs, garlic paste, and salt.
  • Also add flour. milk, and chilli flakes.
  • Mix all ingredients well. Add water if required to get consistency shown in picture.
  • Grease pan and add pancake mixture.
  • Cook one side until bubbles are formed on it. Flip side and cook for 2-3 minutes.
