ARABIAN KABSA RICE

I always feel that rice is the most delicious, easy to cook, and easy to digest food. I can eat rice all the time weather its breakfast, dinner or lunch. I like rice also because we can make endless variations with them. what is Kabsa rice? Kabsa rice is an Arabian dish which can be made with both chicken and mutton. I first time tried this dish in a restaurant and fell in love with it. Flavorful, fragrant rice with pieces of fully tender meat make one of the most heavenly combos. I also love the tomato sauce which is served with rice. I find this sauce very unique and perfect to go with rice.

Kabsa rice recipe is traditionally made with large pieces of mutton which are marinated in rich spices. Rice cooked in mutton stock, are garnished with raisins and nuts. The moment I tasted this dish, I decided to make this at home. Secret behind the dish being so tasty lies in its spice mix. Mostly people prefer to use ready made spice mix but I always recommend homemade freshly grinned spices. First mutton is marinated in spices and then we prepare stock out of this meat including some tomato paste, green chilies and lemons. Fully tender meat is baked, grilled or fried for getting color and crispiness. Rice is cooked in stock full of spices and flavors.

Some variations in kabsa rice

  • We can make both chicken kabsa rice and lamb kabsa rice. We can use portion of meat of our own choice. I am using mutton ribs and loin chops. We can also use big pieces of mutton neck or shank. In chicken lower portion is preferred. We can also use upper breast portion.
  • Raisins give a very nice sweetness to rice, but if you don’t like it you can skip it. You can also choose nuts of your own choice for garnishing.
  • It’s very important to serve fresh salad with rice. You can include fresh cucumber, tomatoes, slices of onion and lettuce. Freshly boiled eggs can also be served with rice.

Tips for perfectly cooked rice

  • I strongly recommend using basmati rice for this dish. Don’t use brown rice or short grain white rice. These genres become sticky and gummy after cooking and you will totally ruin the dish. Long basmati rice gives you perfect fluffy texture and separate grain.
  • Ratio of water to rice should be 1: 1.5. Which means for one cup of rice one and half cup of water is required.
  • It is very important that lid on the pot should not allow steam to come out while simmering of rice. Steam is very important to cook the rice perfectly.
  • Meat should be tender but make sure it is not over cooked and break into pieces. Meat should retain its shape. For this you should keep checking the meat after every 10-15 minutes while cooking.

Ingredients

For spice mix

  • 1 tbsp Coriander seeds
  • 1 tbsp Cumin
  • 1 tbsp Black pepper corn
  • 1 tsp Cloves
  • 4-5 whole Star anise
  • 4-5 whole Mace
  • 5-6 whole Green cardamom
  • 4-5 sticks Cinnamon

For marination of meat

  • 2 kg Large pieces of mutton
  • 1 tbsp Ginger garlic paste
  • 5 tbsp Lemon juice
  • 2 tbsp Salt
  • 1 tbsp Red chili powder
  • 2 tbsp Ground spice mix

For preparing stock

  • 1 cup Cooking oil
  • 2 medium Chopped onion
  • 3-4 whole Bay leaves
  • 7-8 whole Black pepper corns
  • 6-7 whole Cloves
  • 4-5 whole Green cardamom
  • 1 cup Tomato puree
  • 2 whole Lemon
  • 3-4 large Green chilies
  • 6 cups Water
  • Marinated meat

For garnishing

  • ½ cup Raisins
  • ½ cup Almonds
  • ½ cup Cashew nuts

For tomato sauce

  • ½ kg Tomatoes
  • 3 whole Green chilies
  • 4 tbsp Lemon juice
  • 3 cloves Garlic
  • 1 bunch Fresh coriander
  • 1 tsp Black pepper
  • ½ tsp Salt

For rice

  • ¾ kg Basmati rice

Instructions

  • Grind all the spices included in spice mix.
  • Marinate meat with Ground spice mix, ginger garlic paste, red chilies, lemon juice and salt.
  • Soak rice in water for ½ hour
  • Heat oil in pressure cooker. Fry chopped onions in oil for 5 minutes.
  • Add whole spices in it.
  • Cut green chilies from top to bottom and add in onions.
  • Add marinated meat and cook for 5 minutes.
  • Add two lemons. you can use dried lemons as well.
  • Add tomato puree and cook for 5 minutes
  • Add water and close the lid of pressure cooker. cook meat for 10-15 minutes after whistling starts.
  • Open the lid of pressure cooker and check the meat. it should be fully tender.
  • Take a baking tray and put all the pieces of meat on it. Apply oil with brush and bake for 10-15 minutes or until you get golden color.
  • Fry raisins and all the nuts in oil. it makes them crispy.
  • Add soaked rice in boiling stock.
  • Cook rice until stock is soaked by rice and bubbling starts. close the lid of pan and let them simmer for 15-20 minutes.
  • Rice should be fluffy and separate after being fully cooked.

For Preparing tomato sauce

  • Place a cut on all tomatoes and blanch them for 10 minutes. cut helps in removing skin easily.
  • Remove skin of tomatoes and cut them in pieces.
  • Put all the ingredients of sauce in hand blender. Add salt and black pepper as well.
  • Blend the ingredients to the extant that you get chunky texture. do not make paste.
  • Place rice in dish. Add raisins, nuts and baked meat on top. serve it with sauce.
