KFC STYLE ARABIAN RICE PLATTER

KFC is no doubt one of the most popular food chain all over the world. I am also a big fan of not only its fried chicken but also its Arabian rice bowl which is very simple yet super yummy. Combination of light but full of flavours rice with chunks of crispy fried chicken and sauce gives you a perfect heavenly experience. I love Arabian rice because they don’t contain overloaded spices and you don’t feel heavy after eating them. Crispy fried chicken chunks with sweet and spicy sauce best complement simplicity of Arabian rice.

Arabian rice bowl is a complete meal which is enough for one person. Sometimes I crave for this KFC Arabian rice bowl but cannot go there to eat because of my busy schedule or because I am somewhere far away from KFC. At these times I decided instead of depriving myself from this delicious feast I should make my own Arabian rice platter and believe me the experience of making it at home was not bad at all. Rather I can say that taste of my Arabian rice recipe was much better.

 KFC uses short grain rice but I think to replace them with basmati rice really enhance the taste. Basmati rice is softer, tastier, more fragrant, and easy to eat.  Arabian rice recipe is so simple. It hardly takes less than 30 minutes to cook them. Just fry black peppercorns, cloves, and green chillies in oil, add water salt, and chicken cubes and cook rice in this water. Flavour of green chillies and cloves is very dominant in these rice. You can enjoy them on their own or with some curry as well. Tips and suggestions for making Arabian rice

  • First thing which I already mentioned is the use of long grain basmati rice. Taste of Arabian rice becomes much better with basmati rice.
  • Rice should be separate not sticky after being cooked. Sticky rice ruins the beauty of this recipe. For this you should take care in the measurement of water required for cooking rice.
  • Do not use green chillies in excess amount. 6-7 whole green chillies are enough for 1 kg rice. Too much use can make your rice over spicy.
  • KFC style chicken hot shots are easily available in frozen ready to cook form by the name of tender pops or popcorn chicken by different companies. You can buy any of them you like and you just have to fry them. This is a quick way of making your Arabian rice platter at home.
  • It is very important that you immediately serve this platter as soon as you make it. Because chicken loses its crispiness and becomes soggy when you leave it for some time after frying. It reduces the taste of this recipe.

Ingredients

  • 1 kg basmati rice
  • 6-7 whole green chillies
  • ½ cup oil
  • 1 tsp black peppercorns
  • 10-15 whole cloves
  • 1 and ⅓ litre water
  • 1 and ¼ tbsp salt
  • 2 chicken cubes
  • ¼ tsp yellow food colour
  • 20-30 pieces popcorn chicken frozen ready to cook
  • 4 tbsp tomato ketchup
  • 4 tbsp chilli garlic sauce

Instructions

  • Diagonally cut all green chillies in small pieces.
  • Add olive oil in pan in which rice being cooked.
  • When oil becomes hot, add black peppercorns, cloves, and green chillies in it and fry for 20 seconds.
  • Add water according to the quantity of rice being cooked. Different types of rice take different amount of water. You should add according to type you are using.
  • Add salt and chicken cubes in water.
  • When water starts boiling, add rice already soaked in water and cook until water dries.
  • When water dries, take out three tbsp of rice in a bowl and close the lid. Let rice simmer for 15 minutes on very low heat.
  • Add yellow food colour in rice taken out and mix it well in all rice. Add these rice in white rice, close lid, and let them simmer again.
  • After 15 minutes open the lid and mix white rice with yellow rice.
  • Fry popcorn chicken until golden and crispy.
  • For sauce preparation, mix tomato ketchup with chilli garlic sauce.
  • Dish out rice in a plate, add chicken popcorn and sauce on it. Garnish with chunks of green chillies.
