Summer season calls for frozen desserts which involve no cooking at all. Mangoes are now everywhere and let me tell you mangoes and desserts are real besties. No fruit other than mangoes can make best desserts. Have you ever tried mango kulfi?. If not, then try this no cook mango kulfi recipe and chill yourself. What is mango kulfi? It is actually Pakistani and Indian version of mango ice cream. Kulfi is traditionally made with milk and khoya (semi dehydrated milk). It includes nuts also. It can be made with so many recipes but I have made mango kulfi with condensed milk and cream.

This yummy, creamy, frozen dessert gets ready in no time. Just beat all ingredients, freeze, and enjoy. Pakistan is blessed with world’s best mangoes. We have a huge variety of mangoes here which are sweetest and juiciest. Weather its mango shake, mango smoothie, mango salad, or mango ice cream, it is everywhere in our life when it is in season. It is also quite cheaper in Pakistan compared to other parts of world. I literally enjoy using mango in my recipes besides eating it.

Mango kulfi has its own unique taste. It is more creamy and milky than ice cream. It also has distinct aroma of cardamom and rose.Signature kulfi recipe involves milk which is thickened with slow cooking (called rabri) and then adds khoya and nuts.I find this process little tedious and long. I have made easy mango kulfi  with quick method and it is as delicious as traditional one. This mango kulfi is the best treat you can cherish whole summer.

Which type of mangoes is best for making mango kulfi?

Most popular types of mangoes available in Pakistan are Chaunsa, Langra, Anwar ratol, Sindhri, and Dussehri. For milkshakes, smoothies, and ice creams Sindhri and Dussehri types are best. These genres are extremely sweet and very low in fiber content. We can have a good amount of flesh out of these mangoes also. 

Serving suggestions

  • Mostly kulfi is served with falooda noodles. These noodles are made with corn flour and best complement kulfi. You can make milk sauce to dip noodles in it and serve with kulfi.
  • I have used red syrup to drizzle on kulfi top. You can use chocolate syrup, caramel syrup, strawberry syrup, or any flavored syrup to decorate your kulfi.
  • For freezing kulfi, different kinds of kulfi moulds are available in market. You can choose any shape of your choice. I have used moulds and cups also. I have added small chunks of mango on top of these cups.
  • Nuts are very important part of kulfi. Not only add crushed nuts in kulfi batter but also decorate it with a lot of nuts on top when it is ready to eat.
  • It is very important that you serve kufi immediately after taking it out of freezer. After some time it will start melting. You can use crushed ice in base and place kufi on it to stop it from melting.

Equipment

Ingredients

  • 300 gm mangoes peel mangoes and make cubes
  • 400 gm dairy cream
  • 200 gm condensed milk
  • 3 tbsp dry milk powder
  • 1 tsp cardamom powder
  • ½ cup crushed nuts

Instructions

  • Put mango cubes into blender and blend them to a soft paste.
  • Put cream in bowl and whisk it until soft and fluffy. You can use electric beater also.
  • Add condensed milk and again and whisk for some time.
  • Add mango puree and whisk until you get little thick consistency.
  • Add cardamom powder, dry milk powder, and crushed nuts. mix them completely.
  • Add ice cream batter in molds and place lids tightly. Freeze overnight.
  • You can also make kulfi cups by adding batter in cups. cover cups with cling foil. tap cups from top to remove air bubbles and freeze overnight.
  • Sprinkle crushed nuts on top and drizzle red syrup.
