MANGO TRES LECHES CAKE (Three milk cake)

Mango tres leches cake is a yummy and fruity twist to regular three milk cake. Soft, fluffy and moist cake drenched in mango flavoured three milk mixture is a perfect treat for your special occasions like eid. Make this cake and celebrate taste.

Summer season comes with the gift of mangoes. Pakistan has world’s best mangoes and I take full advantage of it. I eat them a lot and use them in my recipes. Whether it’s no bake mango cheesecake, mango ice cream or mango kulfi, I love eating mangoes in different ways. This time I used mangoes in baking.

I have baked so many kinds of cakes but mango tres leches cake is really special. It has a very different texture and taste compared to regular cake. First I made traditional tres leches cake which was delicious but when mango season came I made this cake again and incorporated mango puree in my three milk mixture. The result was delicious again. This cake has a fancy and complicated look but it is so simple in making. You don’t even need any cake mold and piping bags to prepare it.

Base of this cake is just regular cake made with vanilla flavour but make sure that your cake is light and airy because it has to absorb milk mixture. Tres leches is a French word which means three milks including condensed milk, evaporated milk, and dairy cream. I use regular full cream milk instead of evaporated milk because it does not make any difference in taste. In a few simple steps you can make it like a pro. I have learned a few tips and tricks while making this cake which I have shared below in this article. These tips and tricks definitely help you to achieve perfection.

Tips and tricks for making mango tres leches cake

  • Dish in which you are going to bake your cake should be in accordance with quantity of your batter. Cake should rise to three inches after baking.
  • Wait till cake is cooled down to room temperature before you pour your milk mixture on it.
  • Chaunsa mangoes are best to use in this recipe because they are sweetest of all and its flesh has best smooth texture.
  • Let the cake absorb three milk mixture fully. It is better that you poke holes in cake with some wider instrument instead of toothpick.
  • Pour first one third mixture on cake and wait to see if cake absorbs it. If cake is not absorbing three milk mixture it means this mixture is thick. Make it thin by adding more regular milk.
  • It takes at least 8-10 hours for cake to fully absorb all milk mixture. Don’t get panic so early if milk mixture is floating on cake.

Ingredients

For making cake

  • 250 gm butter
  • ½ cup grinned sugar
  • 1 pinch salt
  • 6 whole eggs
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • 1 and ½ cup flour
  • ½ cup milk

For three milk mixture

  • ½ cup mango puree
  • ¼ cup condensed milk
  • 150 gm cream
  • 1 cup milk

For topping

  • ½ cup whipping cream
  • ¼ cup mango puree

Instructions

  • Combine butter and grinned sugar and beat until butter changes colour.
  • Add vanilla essence, baking powder, and salt and beat again.
  • Add eggs one by one and continue beating
  • Now Fold in milk and flour.
  • Transfer cake batter in dish and bake cake for 40 minutes at 180℃.
  • Make one cup mango puree out of fresh mango flesh.
  • Combine mango puree, milk, condensed milk, and cream.
  • Poke holes in baked cake and pour prepared milk mixture on it. keep it in fridge for 8 hours.
  • Beat whipping cream and apply on cake.
  • Decorate cake with mango puree.
