I love refreshing smell and tangy flavor of lemon and I always try different recipes in which I can incorporate it. Lemon is actually most widely used ingredient in drinks, cooking and baking. Beautiful fragrance of lemon immediately attracts you and enhances your hunger. These soft lemon cookies are chewy, buttery, and full of bold lemon flavor. I have incorporated lemon in two ways in these cookies, freshly squeezed lemon juice and lemon zest. Though little sour, these cookies are sweet enough to crave for more after eating one.

While trying this recipe I was a little afraid that lemons might make cookies sour and over power the other flavors. But believe me the flavor and taste that came out was amazing. Although I did not get perfect round shape of the cookies but as long as taste is good, shape can be compromised. These easy lemon cookies are crunchy from edges and soft and chewy from center. Sourness of lemons, sweetness of sugar and aroma of butter makes mind blowing combination. This lemon cookies recipe is made with few ingredients and perfect for evening tea.

Melt in mouth lemon cookies ingredients:

  • Flour: I am using plain all purpose flour for the recipe. You can also use corn flour if you want crunchier cookies.
  • Butter: Unsalted dairy butter is best for the cookies. Do not replace it with oil.
  • Sugar: white sugar is perfect for this recipe. You don’t need to grind it. Grounded sugar is required only for coating the cookies.
  • Lemon juice: For bursting lemon flavor, use freshly squeezed lemon juice. I have not added lemon essence. But if you want to enhance lemon flavor, you can add it.
  • Lemon zest: For getting more lemony punch in mouth, I have added lemon zest also.
  • Baking powder: Baking powder will give little rise to the cookies and gives them soft, chewy texture.
  • Yellow food color: It is totally optional. This food color gives lemony yellowish color to our cookies but if you don’t like it you can skip it.
  • Egg: Egg gives base and softness to cookies, so do not skip egg.

Can we store lemon cookies?

Yes, we can store these cookies for two to three days. But it is very important to store them in air tight container for maintaining moisture and crunch of the cookies.

Some useful tips:

  • It is very important to refrigerate cookie dough for at least one hour. Otherwise you will not be able to make cookie balls for baking.
  • Do not use butter more than mentioned amount. When butter melts while baking the cookies, it liquefies the dough and cookies will melt down totally.
  • If you want to store the dough for 2-3 days, make sure to wrap it with cling foil and keep it in refrigerator.
  • You can also glaze the cookies if you want. Simply mix icing sugar with lemon juice and drizzle it on cookies.

  • 1 and ½ cup Flour
  • 3 tbsp Butter
  • ¾ Cup Sugar
  • 4 tbsp Lemon juice
  • 1 tsp Lemon zest
  • ½ tsp Baking powder
  • 1 pinch Yellow food color If you are using liquid color then use few drops.
  • 1 whole Egg


  • Beat butter and sugar together.
  • Add lemon juice, baking powder, yellow color and lemon zest
  • Add one egg and beat.
  • Add flour and mix until all ingredients are well combined.
  • Cover the cookie dough with cling foil and keep in the refrigerator for one hour.
  • Make balls of dough and roll them in icing sugar.
  • Bake them on 180 degree centigrade for 20-25 minutes.
  • Let the cookies cool down completely.
