Holy month of Ramadan has arrived with all its blessings. We all wait for that month eagerly whole year to gather blessings and rewards. One thing I love is iftar time and I try to make my iftar table beautiful and lively. I am a kind of person who is not very fond of fried things and fizzy drinks. I always try to make simple and tasty food which does not make you heavy at once after 14-15 hours fasting. But sneaks and drinks are most important part of our iftar table and it’s also important to make them healthy. Yesterday I tried peri peri potato wedges which were so good that I am going to make them again and again whole Ramadan.

Peri peri potato wedges are great alternative to fried potatoes. Peri peri is seasoning we make with spices and herbs. I first saw this recipe in a Dutch cook book. The best thing about this recipe is that it doesn’t involve frying. You only need to boil your wedges, toss them in two tablespoon of butter with spices, and your peri peri potato wedges are ready. When you are fasting and don’t want to spend too much time in kitchen, this is the perfect recipe for you.

It is very important that you don’t over boil your wedges. Just cook them 80% and drain extra water. Rest of cooking will be done while tossing in butter and spices. These wedges need just 0 minutes to get ready. You can serve them in iftar, as a side dish with burgers and sandwiches, and also as an appetizer before lunch or dinner.I made wedges with skin on. It is more healthy and time saving too. Potato peel also saves wedges from breaking and gives beautiful texture and aroma after cooking.

How to make dip sauce?

Dip sauce is very important to serve with these potato wedges. I made garlic mayo dip sauce which goes very well with these wedges. Add freshly grated garlic and freshly chopped coriander in mayonnaise, and your dip sauce is ready. You can also serve them with peri peri sauce, chili garlic sauce, or simple mint sauce.

Can I bake peri peri potato wedges?                                                                                                                                 

Of course, there are many other methods of cooking these potato wedges. We can bake them or cook them in air fryer. Process of cooking will differ and result may differ a little bit as well. If you want to bake them, then there is no need of pre boiling these wedges. Just cut the potatoes, mix peri peri seasoning in butter and rub it on potatoes. Spread these wedges directly on baking tray and bake them on 160 degree centigrade for 30 minutes. Same process applies with air fryer also. Time of cooking may differ but you can adjust it accordingly.

You can alternate butter with olive oil as well if you like. Cooking spray can also be used. Cook until you get a crispy golden outside and soft tender inside of these wedges.

Ingredients

  • 250 gm Potatoes
  • 1 tsp Salt
  • ½ cup Chopped coriander
  • ½ tbsp Parsly
  • ½ tbsp Oregano
  • ½ tbsp Red chili flakes
  • 1 tbsp Crushed cumin
  • 2 tbsp Butter
  • 1 tbsp Crushed garlic

For sauce

  • 1 cup Mayonnaise
  • ½ tbsp Crushed garlic
  • 1 tbsp Chopped coriander

Instructions

  • cut potato wedges with their peel on.
  • add 1 tsp salt in water and boil wedges.
  • Boil wedges until 80% done.
  • Add butter in pan
  • When butter is heat up add crushed garlic and fry for one minute.
  • add red chili flakes, parsley. oregano, and crushed cumin.
  • add a pinch of salt.
  • Add chopped coriander. Fry for one minute.
  • Add potato wedges and toss them in spices until golden.
  • For sauce mix garlic and coriander in mayonnaise and serve.
