Traditional Spanish cuisine is defined as simple food with best ingredients. With this formula they make world’s best recipes. Spanish omelet, also known as tortilla de patatas, Spanish tortilla, potato omelet or Spanish frittata is also a symbol of Spanish cuisine’s perfection.

Perfect Spanish omelet is a little bit tricky to cook. My first try was almost a disaster. Although the taste was good but I could not get the desired look. It was a little burnt from one side and I could not achieve the desired thickness. My second try was a little better but it took me few trials to make perfect Spanish omelet. There are a few things which have to be take care of while making this omelet. I am going to mention that below.

Tricks and tips for making perfect Spanish omelet

  • Don’t use a very big pan for making your omelet. In big pan your omelet batter will spread out and you will not get required thickness.
  • Always cook your omelet on low heat. On high heat omelet will burn quickly from outside but inner portion will remain under cooked.
  • Don’t panic. It is a little messy to flip omelet. When cooked from one side, Place a big plate on the top of pan, Hold plate and pan firmly and flip quickly. It will be a little runny but slide the omelet and all the things carefully back in pan.
  • When you fry potatoes and onions, let them cool down before mixing them into your beaten eggs. Hot veggies will start cooking the eggs.
  • To make your omelet creamy add cheese in the middle. First add half mixture in pan. Let it cook for some time, and then add cheese and half mixture on top.
  • Cook for at least 6-8 minutes both sides on low heat.

Can I add more ingredients in Spanish omelet?

Traditional Spanish omelet includes onions and potatoes but it has a lot of variations as well. You can add cheese, mushrooms, capsicum, spring onion, and chicken as well. I have also added mushrooms, cheese, and green chilies.

How Spanish tortilla is different from other tortillas?

Tortillas are basically flat bread made with wheat flour or corn flour. Tortilla bread is cooked and filled with salad, beans, and meat. We make tortilla wraps with different ingredients. In spain, on the contrary, tortilla refers to omelet, made with beaten eggs, veggies, and other ingredients. It is round in shape with a least 2 inch thickness.

Ingredients

  • 4 large eggs
  • 3 medium potatoes
  • 1 medium onion
  • 3 large green chilies optional
  • ½ cup mushrooms optional
  • cup cheese optional
  • ½ tsp salt
  • ½ tsp black pepper
  • spring onion for garnish

Instructions

  • Chop onion and green chilies. Cut potatoes in a way that their thickness should not be more than ½ inch.
  • Take 4 eggs. Add salt and black pepper. Whisk vigorously.
  • Add green chilies and mushrooms in eggs.
  • Heat oil in pan and deep fry potatoes.
  • When potatoes are cooked almost, add onions and fry.
  • Stain fried onions and potatoes and let them cool down.
  • Add fried potatoes and onions in eggs.
  • Heat olive oil in pan and add ½ of the egg mixture. Let it cook on low flame.
  • When eggs are a little cooked add cheese.
  • After 2 minutes add other ½ of egg mixture.
  • Wait for 3-4 minutes until omelet is cooked from edges.
  • Put a plate on the pan and flip the omelet.
  • Put other side in pan and cook for 5-6 minutes on low flame.
  • Transfer omelet in dish and sprinkle green onion.
