Cheesecake always comes on top when I talk about my favorite deserts. I love this silky, creamy and smooth desert to the extent of addiction. Whether its New York cheesecake, mango cheesecake or strawberry cheesecake, I just find it a royal dessert. Strawberry cheesecake is my most favorite because strawberries give beautiful fresh and slight tangy flavor to it. I also love amazing smell and popping texture of strawberries. This strawberry cheesecake heaven recipe is actually cheesecake with some twist. I experimented with the base of my strawberry cheesecake and result was fantastic.

I basically made three layers in my dessert. Instead of using crust made of biscuits and butter, I used sponge cake in base. The second layer is of strawberry cheesecake. For topping I used strawberry jelly and added strawberry chunks in it. It is so simple to make with irresistible refreshing taste. Especially if you are not a professional cook and do not indulge into fancy baking, this recipe is for you. It is no-bake strawberry cheesecake and needs almost no cooking skills. I also love beautiful color combination of layers in it. Bright red topping, slightly pink middle, and creamy white base make it so appealing to the eye and appetizing.

You are definitely going to get a lot of praises by making this strawberry cheesecake heaven. This gorgeous dessert is best to make at weekend parties and family gatherings.

Can I make this strawberry cheesecake heaven with biscuit crust?

Well it’s upon your own choice which kind of crust you prefer. Traditionally cheesecake crust is made with crushed biscuits mixed in butter. By adding sponge cake layer in base you can enjoy two cakes together. It is actually a variation to traditional cheesecake but if you prefer biscuit crust you can make it.

For base:

For base I am using plain vanilla sponge cake. I bought ready made cake but if you like to add homemade cake, you can. Make sure that cake should be soft and moist.

For cheesecake mixture:

First thing we need is cream cheese. I am using full fat cream cheese because it gives perfect creaminess to cake. Second ingredient is full fat cream. Again full fat cream gives perfect creaminess. Fresh strawberries puree for adding strawberry punch. Melted white chocolate is added because it gives sweetness and helps in setting the cake. I have added powdered sugar also because strawberries puree makes cheesecake batter sour. As I am making no bake cheesecake that’s why I added powdered gelatin in it. There is no need to add sour cream or yogurt in it because it makes cheesecake better sourer.

For topping:

I am using strawberry jelly for making topping. I added chunks of fresh strawberry in jelly to enhance its taste and beauty. One thing that should be kept in mind is that you should not pour hot jelly mixture immediately on cheesecake mixture. Cheesecake mixture should be kept in refrigerator for almost an hour before pouring topping. Also don’t pour jelly mixture at once on top. Use big spoon and spread mixture with it on top.

Ingredients

  • 400 gm Cream cheese
  • 200 gm Cream
  • 150 gm White chocolate
  • 1 cup Strawberry puree
  • ¾ cup Icing sugar You can increase sugar if you want sweeter taste.
  • 2 tsp Gelatin
  • 2 pound Plain vanilla cake
  • 160 gm Strawberry jelly
  • 1 cup Strawberry chunks

Instructions

  • Cut one cup strawberry chunks and make one cup puree of fresh strawberries.
  • Cut sponge cake in small pieces and set in the base of dish.
  • Put cream cheese in bowl an d beat it until fluffy.
  • Add cream in mixture and beat again.
  • Melt white chocolate and add in mixture.
  • Take ¼ cup of water and mix two teaspoon of gelatin in it. wait 15 minutes for gelatin to bloom.
  • Now add strawberry puree in cream cheese mixture.
  • Add powdered sugar in mixture and mix.
  • After 15 minutes heat gelatin mixture in oven for 10 minutes. Now add one tablespoon of cheesecake mixture in it and mix evenly.
  • Mix gelatin mixture in cheesecake mixture.
  • Pour cheesecake mixture on sponge cake in dish. keep in refrigerator for at least one hour.
  • Boil 2 cups of water and add jelly powder in it. stir it until all the jelly dissolves.
  • Add strawberry chunks into jelly mixture. Take out dish from refrigerator and pour jelly on top with big spoon.
  • Keep dish in refrigerator for at least 2 hours.
  • Take whipping cream in bowl and whip it.
  • Transfer cream in pipping bag. Take out dish from refrigerator and make design of your own choice on it.
  • Serve chilled.
