But lazy people like me love cakes which are made in one dish without using fancy decorations and tools. Tres leches cake is one of those cakes which we can make by just mixing and pouring, no specific pan or piping is required. We just mix ingredients, pour them in any dish and bake. Top it with simple whipping cream which can be mixed with chocolate, berries, caramel, or anything you love to add.

Tres leches is a Spanish word which means three milks. We make a mixture of three kinds of milks and soak the cake sponge in it. Poking holes in cake help it to absorb mixture completely. This three milks mixture makes sponge super moist. Speciality of this cake lies in the fact that it is moist but not soggy. We pour a lot of liquid on sponge which gives it a very unique texture and flavour. What is three milks mixture in which we soak our cake?

Three milks mixture contain condensed milk, cream, and evaporated milk. We mix these three things and pour on our cake. It is not necessary that you use strictly these milk products. I have used simple full cream milk instead of evaporated milk. You can also replace condensed milk with evaporated milk if you like less sweetness because evaporated milk is kind of unsweetened condensed milk.

How long is the life of tres leches cake?

Freshly made things are always best in taste and flavor. But if you have left over cake and you want to save it, you surely can. Keep it in your fridge and its taste remains perfectly good for 2-3 days. But do not let it save in fridge for more than that.

I have made this cake in casserole dish. You can use any dish, of any shape for making this cake, but it should be oven safe. You have to consider size of the dish as well. Cake batter should cover half volume of dish and there should be space left for topping after cake is baked.

Ingredients

for cake sponge

  • 5 whole eggs
  • 1 cup sugar
  • 2 tbsp butter
  • ¼ tsp salt
  • ½ tsp vanilla essence
  • 1 cup flour
  • ½ cup milk

for three milk mixture

  • ½ cup full cream milk
  • ½ cup condensed milk
  • ½ cup cream

for topping

  • 200 gm chocolate chips
  • 400 gm heavy cream

Instructions

  • First separate egg whites and egg yolks. Add egg whites in a bowl start beating it Keep beating it until stiff foam is formed. Add ¼ cup sugar in it during beating.
  • In another bowl add egg yolks, ¾ cup sugar, and butter, Beat them until fluffy.Now add salt, vanilla essence, and milk in it and mix.
  • Now add flour and whisk it in batter. do not use beater now.
  • Add egg whites foam in batter little by little. use spatula or spoon to fold it. Do not use beater.
  • Transfer this cake batter in dish and bake it at 180 degree centigrade for 40 minutes,
  • When cake is baked let it cool down on room temperature. When cake is cooled down, take a chop stick or fork and poke holes on whole cake.
  • Mix milk, condensed milk, and cream and pour that mixture on cake. Keep cake in fridge for 6-8 hours.
  • Melt chocolate chips and whip cream. Mix chocolate in cream,
  • After 8 hours take cake out of fridge and pour cream topping on it. spread it evenly on cake. sprinkle white chocolate on it, refrigerate cake for 30 minutes before eating,
