YUMMY PIZZA POCKETS

Pizza is my all-time favourite snack and it is always fun to try different flavours and different types of pizza. My pizza pockets recipe is also a new yummy style to enjoy pizza in different way. I tried them in month of Ramadan and everyone at home loved them. These pizza pockets taste like regular pizza but their look is pretty different and cool. I made cute little pita breads with basic recipe with addition of little bit of Italian herbs in dough. Cut them in half from middle and added the filling. You can make any kind of filling according to your taste. I personally like a lot of veggies and chicken with barbeque marinade, and of course cheese is must.  But there are a lot of options regarding your choice of veggies, meat, and cheese. This yummy snack does not require much effort and time nor you need fancy ingredients for it. Also try my finger licking good prawn pizza recipe.

Meat marinade is very important in developing taste of your filling. Barbeque seasoning, fajita seasoning, Mexican seasoning, or mild creamy seasoning, all these flavours are perfect for your meat marinade. I suggest you to use chicken instead of beef or fish because it this snack tastes best with chicken. If you are making this snack for your kids, then be careful in adding amount of spices in chicken marinade and spicy veggies like jalapenos. Before adding yeast in your dough it is very important that you activate it in warm water with some sugar in it.

If you directly add instant dry yeast in dough, there is possibility that your yeast is expired and your dough does not rise. Check my YouTube video below for watching complete activation process of yeast. Kneading and stretching of dough is also important for making your pita breads soft. I have cooked pita breads both in baking oven and in pan on gas stove, you can use any method you are comfortable with. Don’t overcook your pita bread because it can get hard.

Can I store my pita bread dough?

Dough of pita bread contains yeast and it depends on amount of yeast that how long you can store your dough. Normally you can store up to five days in fridge and up to three months in freezer. But lesser the amount of yeast longer the storage time of your dough.

How can I renew my leftover pizza pockets?

Pizza pockets filling contains cheese which gets hard when cooled down and does not tastes good. Always serve them hot and if you want to renew leftover pizza pockets then instead of using microwave warm them up in baking oven or air fryer on a very low heat.

Ingredients

for making dough

  • 500 gm plain flour
  • 3 tbsp oil
  • 1 tsp oregano
  • ¾ glass water
  • 1 tbsp sugar
  • 1 tbsp yeast

for filling

  • 250 gm boneless chicken cut in small cubes
  • 1 tbsp ginger garlic paste
  • 1 tsp salt
  • 1 tsp red chilli powder
  • 2 tbsp yogurt
  • 3 tbsp oil
  • 3 tbsp capsicum cut in thin slices
  • 2 tbsp jalapenos cut in cubes
  • 3 tbsp olives cut in cubes
  • 3 tbsp mushrooms cut in thin slices
  • 3 tbsp pizza sauce
  • ¼ cup Mozzarella cheese

Instructions

  • Add 1 tbsp yeast in ¾ glass warm water. Add 1 tbsp sugar also. Mix all things together and leave for 15 minutes.
  • In flour add salt, oil, and mixed herbs. When water becomes foamy, add it in flour and knead it to a soft dough. Place that dough in a warm place for two hours or until dough proofs.
  • Roll the dough to a ½ inch thickness. Take a round cutter and take out small round pita breads from this dough.
  • Apply oil in the baking tray and put all pita breads in it. Apply little oil on these pita breads and bake them for 15 minutes at 200°C. Or cook them in a pan by applying little oil in pan for 10 minutes each side on medium flame.
  • Marinate chicken with ginger garlic paste, yogurt, red chilli powder, and salt for 2 hours.
  • Heat oil in pan and add marinated chicken. Cook chicken until its water dries. Add pizza sauce, all veggies, and cheese. Let cheese melt on low flame and then turn off heat.
  • Cut cooked pita breads from middle to make pocket. Add prepared filling in these pockets.
